From Starch: Pasta

Making fresh pasta at home is easier than you think, and it tastes so much better than store-bought! I’m going to walk you through my step-by-step method, including tools I use (along with my favorite pasta attachment & kitchen tools) and a few tips to make this fun and stress-free.

Ingredients

  • 2 1/2 cups all-purpose flour

  • 3 large eggs

  • Pinch of salt

  • Optional: a sprinkle of Chef’s Blend seasoning for extra flavor

Let’s Make the Dough

  • With the flour, create a well in the center. (photo 1.)

  • Crack all the eggs into the center of the well, add a pinch of salt, oil, and beat just the eggs with a fork. (photo 2 & 3.)

  • Gradually incorporate the flour into the eggs until a dough forms. (photo 4.)

Knead the Dough

  • Knead for about 8–10 minutes until smooth and elastic.

  • Wrap in plastic wrap and let it rest for 20–30 minutes.

Roll the Pasta

  • Divide the dough into smaller portions. (photo 5)

  • Use a pasta attachment or rolling pin to roll each portion to your desired thickness. (photo 6)

Tools & Ingredients

Pasta Attachment - I use this pasta attachment to roll out the dough perfectly every time. It’s sturdy, easy to clean, and makes the sheets just the right thickness. (Shop!)

Stand Mixer- Just can’t go wrong with this stand mixer. Have had it for years now, and it has never failed me. The plus side I love the most is all the different attachments you can get. (Grab one here!)

Sheet Pans- Everyone loves a good sheet pan, and the big one can be a pain if you don’t have a lot of items. These mini pans are perfect for smaller dishes/ingredients. (12” Sheet Pans.)

Rolling Pin – Prefer rolling by hand? A solid rolling pin is key. I use this one. (Rolling Pin)

Seasoning Blends – I always use my own Chef’s Blend seasonings. It gives the pasta that little extra flavor punch. You can grab them here.

Black Truffle Oil- Something I use to add a subtle, upscale touch to a dish that is simple yet elegant.

💡 Pro Tip: Sprinkle a little Chef’s Blend right into the dough before rolling it into pasta. This gives it flavor throughout the entire pasta.
